What is special with Ofelos cookies?

Ofelos cookies are specially design to suit the diabetic diet, which means that the ingredients used are low glycemic index. Our main ingredients are Almond flour and Erythritol.

How come Ofelos cookies do not raise blood sugar although they taste sweet?

Our products contain no sugar of any kind. Their sweet taste originates from a sweetener called ERYTHRITOL. Sweet taste normally comes from sugars (sucrose, lactose, fructose, glucose) but several other chemical compounds have a molecular structure that gives rise to sweet taste as well, such as aldehydes, ketones, and sugar alcohols. Erythritol is a sugar alcohol. It is not a sugar and does not cause blood sugar spikes, although it tastes sweet, almost indistinguishable from sugar.

Is it possible to manage my blood sugar levels by eating natural products, like fruits, honey, or ugali?

Short answer, Not at all. In fact, it is very dangerous. A diabetic must eat a diet that is low in carbohydrates, i.e., a keto diet. A carbohydrate will always produce blood sugar spikes, regardless of whether it comes from nature or is the outcome of processing in the laboratory. Note, on the other hand, that only net carbohydrates cause blood sugar spikes. Fibres, which are also carbohydrates, do not break down during digestion, therefore, they can be consumed by both diabetics and other keto dietists.

What is the difference between keto- and diabetic friendly diet?

There is no difference when it comes to what a person can eat. However, a non-diabetic person who follows keto diet in order to lose weight or build muscles must follow the keto diet consistently, without exceptions. A diabetic, on the other hand, normally follows a keto diet, but there are moments where s/he gets an episode of low blood sugar (hypoglycaemia). If that happens, s/he needs to eat some sugar urgently in order to raise the level of his/her blood sugar. Hypoglycaemia is dangerous and should be avoided by means of careful blood sugar control and adjustments in diet and/or intake of insulin. Needless to say, a person without a metabolic syndrome like diabetes will not get hypoglycemias, other than under very extreme circumstances.

Muslims often ask whether they can consume erythritol, since it is a sugar alcohol.

In fact, erythritol is called “sugar alcohol” because of its molecular structure. In real terms, it is neither a sugar nor an alcohol, that is why consumption of erythritol will never give you a blood sugar spike, neither will it make you intoxicated.
